Only hour 9? Sounds like you still have 3 hours of smoke and the 10-12 hours of a hot hold rest to go still!
It’s a 2.5kg portion of the pin end of the cut. Becuase of the intramuscular fat in that part of the cut. 9 hours of smoke is more than enough, it’s now in foil with a bit of a mop.
